In a novel approach to showcasing the city’s rich heritage, a new web format titled “Convivium: Flavors of Pompeii” has been launched, aiming to valorize the park’s plant heritage through a unique blend of food, archeology, and greenery. A Celebration of the White Onion of Pompeii
The first episode of “Convivium: Flavors of Pompeii” features the white onion of Pompeii as its protagonist, an emblem of the local agricultural identity and a narrative bridge between archeology and ancient and contemporary gastronomy. The episode begins with a cooking show inspired by the Patella Lucretiana, an ancient Roman recipe based on onions taken from De re coquinaria by Marco Gavio Apicius. Renowned chef Fabrizio Mellino, patron of the “Quattro Passi” restaurant in Nerano, presents a contemporary reinterpretation of the dish using vegetable ingredients produced in the Pompeian Flora Nursery, located in the Casa di Pansa (Regio VI, 6, 1).
Uncovering the Past and Present of the White Onion
The program also includes two scientific focuses dedicated to the past and present of the white onion of Pompeii, led by the Park’s experts. Through the presentation of paleobotanical finds, curated by archaeobotanist Chiara Comegna Ales Spa, the production and use of onions in Pompeii in ancient times are revealed. A second in-depth analysis, conducted by restorer of historic gardens Maurizio Bartolini, highlights the characteristics of the variety now cultivated in the Pompeian Flora Nursery, emphasizing continuity and innovations with respect to the historical agricultural tradition.
