The buffalo burrata has confirmed its position as a main driver of the market, with an increase of +18%, while buffalo ricotta has also recorded double-digit growth, equal to +11%. Buffalo mozzarella, although already consolidated on the market, shows superior performance compared to the category average, with an increase of 8%, thus strengthening the premium positioning of the entire segment.
