The Genesis of the Dish: From the Mountains to Milan
As the chef himself explains, “we replaced the classic filling with a filling of potatoes creamed with eggs and Parmigiano Reggiano, making it rounder and more enveloping, and added speck, which recalls the mountains and Alpine culture”. The pastry remains poor and pure, made only of water and flour, while the mountain butter continues to be the protagonist, enriched by saffron, a typical Lombard spice, which gives brightness and elegance.
The Link with Milan and the Final Result
The link with Milan is expressed by restricted osso buco completed by the gremolada of aromatic herbs and lemon zest, which adds freshness and depth to the dish. The final result is a casunzieo that retains its identity, evolving into a tastier and more structured preparation, where the Ampezzo mountains meet Milan: speck and mountain butter interact with ossobuco and gremolada, in a balance between strength and elegance.
